Serves
3-4 People
Ingredients
- 400g (14 oz) spaghetti
- 200g (7 oz) bacon pieces
- 2 cup heavy cream
- 2 cup grated Parmigiano Reggiano cheese
- 4 cloves garlic, minced
- 2 Whole garlic cloves
- 1 large white onion, finely chopped
- 2 tablespoons Olive oil
- 1 tablespoons butter
- Salt, to taste
- Freshly ground black pepper, to taste
Steps
1
Prepare the Cheese and Cream Mixture
In a medium bowl, whisk together the heavy cream and grated Parmigiano Reggiano cheese. Season with salt and freshly ground black pepper to taste. Cover and set aside.
2
Cook the Spaghetti
Bring a large pot of water to a boil. Add salt, 2 cloves of garlic, and 1 tablespoon of olive oil. Add the spaghetti and cook until al dente. Reserve ½ cup of the pasta water, then drain the rest. Toss the drained spaghetti with 1 tablespoon of olive oil to keep it from sticking and set aside.
3
Cook the Bacon and Sauté Aromatics
In a large skillet over medium heat, cook the bacon pieces until crispy. Add and sauté the chopped onion until translucent, about 1 minute. Add the minced garlic and cook for another minute, stirring frequently at medium heat to prevent burning.
4
Add the Cream Mixture
Pour the cheese and cream mixture into the skillet with the bacon, onions, and garlic and butter. Stir well and let it simmer on low heat until the sauce thickens slightly. Add some of the reserved pasta water if needed to adjust the consistency. Adjust salt and pepper to taste.
5
Serve the Pasta and Sauce
To serve, use a fork to roll up a portion of spaghetti and place it in the center of a plate. Let each person to pour or ladle the creamy sauce over their pasta, adding as much or as little as they prefer.
Optional Add-Ons:
- Fresh parsley or chives for garnish.
- A squeeze of lemon juice for brightness.
- Springle some of the crispy beacon pieces on top as garnish.
This richly flavored spaghetti dish pairs wonderfully with a crisp green salad and a glass of white wine.
